WAGYU BEEF MEAT
Ox from Tajima is well known as Kobe Ox. Originally form Japan, this Kuroge Wagyu (Black leather beef), are grown in Japan rural zones. The description of Kobe, was originated at the port of this well known city from where this precious meat is distributed all around the world.
Nowadays less than 300 farms raise Kobe ox. In Spain they are raised in Burgos. The fact is that although raising this oxen produces great benefits, it is very complex, laborious and expensive. Oxen receive a massage every day that helps them to relax and get a good muscular tone. It is probed that this massages help the animals to be more calm, relaxed and satisfied, which pays in a better quality meat than the one from animals under stress.
Diet of the Kobe Oxen include sake and beer. Beer stimulates hunger so they eat more fodder. On top of it, beer interacts with fat of their bodies with an exceptional result: meat contains little fat.
This is a delicatessen that surprises due to its juiciness and softness and due to its sweet bouquets, very similar to foie. More than that, it has the plus of being excellent for health due to its great infiltration of unsaturated fats. “Meat tastes as it should taste. It is juicy, tender, with a texture that makes it able to be eaten with a spoon. In the mouth it explodes as a n orange slice. Nothing compares to it.
